The Student Health Service Dietitian coordinates all phases of nutrition care including nutrition assessment, care planning, monitoring, education and counseling of Student Health Service patients. Works closely with the Health Promotion and Clinical team to provide nutrition education/campus outreach and collaboration with campus community.

Duties/Responsibilities:
  • Assess and create nutrition plans to improve the health and well-being of patients. Focus on promoting health, preventing illness, and managing conditions through diet, developing educational materials
    • Analyze patients' health status, goals and dietary restrictions, tracking dietary intake and progress and educating patients on how to maintain a balanced diet.
    • Provide one-on-one, evidence-based nutrition counseling for students dealing with disordered eating, eating disorders, weight management, food allergies or intolerances, chronic conditions (e.g., diabetes), and general wellness.
    • Perform comprehensive nutrition assessments, create individualized meal plans, and monitor progress for students with complex health needs.
    • Develop, review, update and implement educational materials to meet the needs of patients, students and professionals.
    • Develop and deliver workshops, presentations, and social media content on topics such as healthy eating on a budget, intuitive eating, and nutrition for students.
    • Work closely with counseling services, providers, nurses, and all campus community collaborators, particularly in managing disordered eating or eating disorders, weight management and high-risk cases.
    • Maintain accurate, timely, and confidential patient progress notes in an Electronic Health Record (EHR) system
  • Nutrition Education and outreach
    • Collaborate with Health Promotion and other community partners to develop and implement strategic educational initiatives and programing that improve student's overall nutrition awareness and knowledge.
    • Create outreach educational materials in various formats, including social media posts and handouts, that are developed to address the differing nutrition needs of the general student population.
    • Provide education on the latest scientific research for nutrition recommendations for the student population.
    • Develop education resources to support students with specific medical diagnosis, special dietary needs, cultural dietary needs and short- and long-term goal planning to optimize academic success.
    • Supervise and mentor dietetic interns and peer mentors.
Work Schedule:
  • Academic year: Monday - Friday 8:00am-5:00pm
  • Summer & Breaks: Monday - Friday 7:30am-4:00pm
  • Flexibility required to accommodate programming and student needs that may require some evenings or weekends
Hiring Range:

$53,000 - $65,000 to commensurate with experience.

  • Pay is based on several factors, including budget, labor market, prior experience, skills, knowledge, abilities, education, licensure and/or certification and other business considerations .
Minimum Qualifications:
  • Minimum of a bachelor's degree in dietetics or food and nutrition through an Accreditation Council for Education in Nutrition and Dietetics (ACEND) accredited program. *(After January 1, 2024, the ACEND requires anyone taking the registration exam to become a dietitian have a master's degree. Prior to January 1, 2024, individuals qualifying to take the registration exam need to have the minimum of a Bachelor of Science degree in dietetics.)
  • Current or eligible license with North Dakota Board of Dietetic Practice (NDBODP)
Preferred Qualifications:
  • Current Minnesota Board of Dietetic Practice licensure
  • 1-3 years professional work experience in higher education and/or ambulatory care setting
  • Experience with documentation in an electronic health record
  • Previous experience in clinical or community nutrition, with specialized knowledge in diabetes and pre-diabetes, eating disorders, and weight management in young adult population
Core Competencies:
  • Counseling Skills: Proficiency in motivational interviewing and behavioral change techniques.
  • Clinical Knowledge: Expertise in medical nutrition therapy for various conditions, particularly those common in young adults.
  • Communication: Strong interpersonal skills for working with a diverse, young adult population.
  • Technical Skills: Proficiency in electronic medical records (EMR) systems, social media and marketing platforms.
  • Ability to work independently and as part of a multidisciplinary team
  • Crisis Intervention: Ability to provide immediate, supportive care for eating disorder relapses or urgent nutrition-related emergencies.
  • Detail-oriented with strong organizational skills.
  • Excellent oral and written communication and interpersonal skills.
  • Ability to provide leadership and problem-solving skills in analyzing health/wellness promotion needs of emerging adults, especially college students.
  • Collaborate and build strong relationships with the Student Health Service team and other campus community partners.
